A Delicious History
Chanhassen Dinner Theatres opened in October of 1968. The first “Chicken Chanhassen” appeared on our theatre menu in 1971, however, it was Chicken Kiev, a very popular chicken dish in the early 70s.

In 1974 with the opening of its first run of Oklahoma, the “Chicken Chanhassen” changed to a chicken breast with a bubbling cream sauce akin to a Bechamel.
In 1975 the Kiev made a brief comeback. In 1976 the menu item was still named, “Chicken Chanhassen,” but for the first time it was stuffed with a Minnesota wild rice stuffing, which included mushrooms, spinach, pecans and bacon. This chicken was breaded, baked and topped with Supreme Sauce (again similar to a Bechamel).
In 1977 the chef changed the sauce to an orange marmalade glaze, which remained on the menu into 1980 when then Executive Chef, Bob Jacobson had a thought, “Hmmm, let’s try something completely different.” The chicken was stuffed with a more simplified homestyle Minnesota wild-rice stuffing. Next it was oven-baked to a crisp with the skin and then generously topped with our signature Hollandaise, the star of the show.
This incarnation took off like a rocket, turning it into the “Famous Chicken Chanhassen,” and has not significantly changed since. In 2019, to the guests’ delight, Executive Vice President, Solveig Huseth-Theis asked the chef to increase the proportion of Minnesota wild rice to the stuffing blend.
